Tom, using table salt will work fine. It does weigh more than kosher on a per unit volume so use a litle less or else the pork might be too salty for your tastes. I would suggest you use three tablespoons per quart of water. I hope it turns out great!

I'm in Kuwait with the U.S. Army and resourses are limited. I want to try your brine this weekend and kosher salt is not available. How much table salt would I want to use instead of kosher? I know I can use apple juice instad of cidar and I will beg, borrow or get my brown sugar from the Dining Facility.

Hi, I wanted to let you know I tried your brine recipe to the letter. I trimmed, and butterflied my pork tenderloin and brined for about 3 1/2 hrs. Then used a prepared rub. We ended up grilling it and it was the most tender I have ever had with this cut. I have never brined it before and will do it from now on! Thanks! My family and I loved it!
